Dhokla is a Gujarati special snack, it is also very tasty. In today’s time, Dhokla is not only famous in Gujarat, nowadays it’s everywhere. It is as attractive as it is tasty. It is also light for the tummy and healthy. The ingredients for making Dhokla are easily available in every home, you simply need Besan (chickpeas), which is the main ingredient for this lovely recipe, apart from this ENO or baking soda, green chili, Haldi powder, and oven required. Dhokla is the name of the dish of other states but simply we can say it’s a Besan cake instead of maida cake. Besan is always good for your health, along with, it’s cooking it by steam, and a very small amount of oil is required in all this process. So, without a doubt, it’s good for your health. However, it’s not sweet like other cakes, it’s a little spicy steamed cake. We prefer this mainly in summer.

Dhokla can make many ways, such as Rava dhokla, suji dhokla, besan dhokla, vegetable dhokla, and masala dhokla, but today I am going to prepare besan dhokla, which is very common and tasty as well.

Besan Dhokla Ingredients
- 2 cups Besan (Chickpeas)
- Ginger and green chilli paste
- Haldi Powder
- Salt as per requirement
- Baking Soda, ENO or Yeast (whatever is available at home to use) ENO-1 packet
- Water (For making Batter)
- Curd- 1 cup
- Lemon Juice-1/2spoon
- Oil – 1.5 tbsp
- Rye – 1 tsp
- Sugar – 1 tsp
For Tempering (Tadka Ingredients)
- 1 tbsp of oil
- Curry leaves – 13
- Asafoetida – a pinch
- Rye – half a teaspoon
- Green chili – 4 chopped
- Water – 1/2 cup
- Sugar – 1 teaspoon sugar

Preparation
- Take a vessel, sieve the gram flour into the vessel, add salt as per taste, add ginger and chilli paste, haldi powder, ENO, and curd, then whisk it with adding a small amount of water in it. Mix it properly without any lumps. Make a thick paste of spicy gram flour.
- Take out another vessel, grease oil or butter into it, add the thick paste, today I am going prepare this on steamed kadhai by putting water on it.
1st put the kadhai high flame on the gas, once the water boils then put a small steel bowl then keep the gram flour paste bowl on to the small bowl Bring a small tempering pan(Tadka pan)
Add a small amount of oil, add asafetida, add rai, once the mustard crackles, chopped green chilies, curry leaves. Fry for a few seconds, add water, once water gets boiled, add sugar, lemon juice,
Finally spread this tadka or tempering evenly over the dhokla. After some while cut this dhokla into small square size pieces. Garnish with some coriander leaves and grated coconut if you have otherwise this is optional.
Now it’s ready to serve with your friend, family, and kids. It’s good for children’s tiffin snacks or evening snacks
